Do you know how to order whatever dish with an egg over it? If you say “ใส่ไข่” (sài kài), you’ll get an egg mixed up with other ingredients in your dish. Use the verb “โปะ” (pò) and you’ll get a beautiful-looking egg over the rice! If you want a fried egg, say the name of the dish followed by “โปะไข่ดาว” (pò kài dao) or say “โปะไข่เจียว” (pò kài jiao) if you want an omelette.

Example:

ขอกะเพราโปะไข่ดาวที่นึง
[kǎw gaprao pò kài dao tîi neung]
I’ll have one order of basil stir-fry with a fried egg (on top of the rice).
